[XeTeX] XeLaTeX or LaTeXiT strange behavior

There is a package mathastext you may try.

The equations are imported as pdf and include the math fonts.

Are you implying that the LaTeXit preamble still causes problems on one of your computers?

The following is as close as I can get it without further investigation.
