Your example bib-entries are much too long, and as you can see from
the comments you didn't describe your actual problem.
But your input of the french entry is wrong: Don't add spaces before
the punctuations (" ensemble :" should be " ensemble:"). This spaces
are inserted by xelatex and pdflatex. Also change the hyphenation
key to hyphenation = {french}.
If you want that the french entry uses the french spaces before the
punctuation but not the british one use as option "babel=other" or
"babel=other*". babel=hyphen will only change the hyphenation rules,
which means that every entry use the french spaces (as french is
your main language).
