If you are using XeLaTeX (not plain XeTeX) you use the FontSpec package
to change fonts and Polyglossia to switch languages. I wrote an
introductory tutorial for XeLaTeX a couple of years ago. It needs some
updating but nonetheless will get you started; after working through the
discussion of Fontspec and Polyglossia there, you can use the
documentation for those packages to answer additional questions. See
