[XeTeX] how to create and install xexmltex.fmt

That was the clue I needed. Thanks!

Except I edited that file to make xetex the underlying engine for xmltex and then ran

sudo fmtutil-sys --byengine xetex

and all went well until it reached xmltex at which time I got:

.tex UTF-8 Hyphenation patterns for Ancient Greek
! Nonletter.
