John already mentioned that some automatic ligatures are activated by
using the tex-text mapping when loading the font. The fonts XeTeX uses
are better not METAFONT based! These simple fonts have no features and
tables and no Unicode encoding. XeTeX needs OpenType or TrueType fonts.
In TeXShop you can't use the pdfTeX engine. TeXShop comes with XeTeX
(or LuaTeX) based engines in /Applications/TeX/TeXShop.app/Contents/
Resources/TeXShop/Engines/Inactive or ~/Library/TeXShop/Engines. The
ENGINE files in this personal directory take precedence over the
original ENGINE shell scripts from inside the TeXShop application
bundle. And it's documented.
