[XeTeX] How to use AMS's \mathbb with XeLaTeX?

Just load the appropriate AMS package as you would in ordinary LaTeX.
mathspec can load the only the very same fonts that fontspec can (and
ordinary TeX fonts are not included - they must be loaded in the traditional
way). By the way, I strongly encourage you to upgrade to the latest version
of mathspec.
