[XeTeX] Problem: Beamer+xelatex+\XeTeXdefaultencoding

Can you please confirm (by attaching the log file)
that the version of XeTeX that you were running
was the TL 2010 version and that you were not
accidentally picking up the MikTeX version even
after installing TL 2010 ?
