[XeTeX] : Temporarily disable Mapping=tex-text

One way you could do that is to drop the {Mapping=tex-text} for the main 
font (or any other you define) and enter directly the apostrophe '  
(U+0027) as desired as well as entering directly the ’ U+2019 from the 
keyboard.
