As far as I know, makeindex "knows" only 8 bits characters.... So, you
can't use it in utf-8.

accented characters are not well sorted with makeindex, to get a correct
sorting you might use the @ feature of makeindex:
\index{ete@été} (or the converse, I do not remember, see the manual)
