Check pdfscreen! Loading it via

	\usepackage[\Medium,panelleft,palegreen,paneltoc]{pdfscreen}

you can define \Medium when invoking XeTeX:

	xelatex '\def\Medium{screen}' \\input <file.tex>
	xelatex \\def\\Medium\{print\} \\input <file.tex>
