Give \usepackage{MnSymbol} a go! This package provides mathematics symbols
that are designed to blend well with Minion Pro.

There is a MinionPro package for LaTeX, but it takes a bit of effort to

But once it is installed (the step by step instructions are easy to follow),
it works indefinitely. To get your entire document in Minion Pro, I think it
is more convenient (especially with respect to mathematics) than fontspec
only a single line \usepackage[options]{MinionPro} is needed. It certainly
provides swash characters for \mathcal.
