Howdy,
At the top of the .tex file put the line
%%!TEX TS-program = xelatex-xdvipdfmx
and TeXShop will use that engine whenever you compile that file. You
could also use the drop down engine menu on the Source Document
Window's Toolbar (NOT the Typeset Menu) but that won't ``stick.''
