Does the remark about the optical sizes means that one could throw away
all the eu1-part and simply use something
\setmainfont{LMRoman10-Regular} ?
A small test didn't seem to have the desired effect: xdvipdfmx didn't
use LMRoman5-Regular for tiny text.

(About the tex-text-mapping): Not really. But everytime you make a
choice and set a default there will be a user that want something else
;-) So I have a tendency to hold things flexible.
