Hi sn!

Have you had a look at Polyglossia?

Simply add:

\usepackage{polyglossia}
\setdefaultlanguage{greek}

This should render all standard text as Greek. I'm not sure why the
\renewcommand does not work here, but it could be an encoding issue.
