[XeTeX] Undefined control sequence problems

You need to use xelatex, not plain xetex, if you're using LaTeX as  
your document markup/format.

BTW, when you switch to a Unicode/OpenType font loaded using  
fontspec, you'll also want to use the xunicode package in order to  
support LaTeX-style accent commands and so on.
