I'm not entirely sure what the gaps are myself.
It seems to consistently fail for only some OpenType fonts on my  
system. When I say fail, I mean that the italic font is not  
automatically found and the plain regular font is used instead, as / 
I, etc., is supposed to do.

I don't have Minion Pro personally, but I've a report of fontspec  
failing for the font that this user had. I see a similar problem with  
Warnock Pro. The "Adobe ... Pro"-named fonts seem to work fine, though.

This is separate from a XeTeX bug in which trying to choose "Apple  
Symbol/I" brings up an actual error message.
