As the name suggests, Hoefler Text is designed for texts.  It is, IIRC, 
influenced by fonts such as Caslon and the Garamonds, and has a range 
of features useful for texts (small caps, old-style and tabular 
figures, etc.).  It is a truly professional-quality font bundled with 
the OS.  I only wish it took advantage of the hanging punctuation 
feature in AAT.
