Glad you found the solution; I couldn't see any obvious reason for the 
problem when I looked at your original message.

Looking again at the problem file you sent, there is indeed an extra 
character between the "ä" and "c" in the title, but in my default 
editor font (Lucida Grande) it's an invisible, zero-width character. 
You can tell it's there by moving the cursor one character at a time 
through the word; also, if you double-click to select the word, you'll 
find that it is divided into two parts.

Looking at the Paper.tex file, the actual bytes present at that point 
are "c3 a4 c2 8a". C3 A4 is the UTF-8 representation of a-umlaut; C2 8A 
would be the Unicode value U+008A, which is a non-graphic control, and 
probably maps to the "undefined glyph" in most fonts.

I'm guessing this happened at some point when the TeXShop editor 
encoding was changed, but there was already a non-ASCII character in 
the file and it was not converted properly.
