Beware there are two separate issues here:
- Without the Lucida fonts, the problem is caused by the fact that \Gamma is taken from the text font, namely CMR for a standard LaTeX setup (ie, unless you used the package mathptmx, mathpazo, etc.). But when this font is replaced by an OS X font, for example Hoefler Text, as XeTeX and fontspec.sty allow, there is no longer any character at the expected slot ("00) in this font.
- With the Lucida fonts, the problem is specific to your setup, because you have not the expert font LucidNewMatRom (= Lucida New Math Roman) in your Classic font folder /System Folder/Fonts.
