The output of pdf2ps is supposed to be sent directly to the
typesetter.  Glyphs are converted to lines and curves.  Hence you have
to specify the resolution of the output device.  The default is 720dpi. 

pdftops produces PS with hinted fonts which can be used at arbitrary
resolutions.
