eplain won't (directly) help w/ LaTeX.
I'd suggest using Peter Wilson's memoir documentclass which has
excellent documentation and a verse environment.
Here's a list of free documents on (La)TeX w/ some commentary which I
put together a while back --- lots more at www.tug.org and the links
below (on the texhax version of this message).
