To get Times (well URW's clone) use:

\usepackage{mathptmx}

in your document preamble. You can read up on this and similar packages 
in the PSNFSS documentation which is included w/ ProText.

There is no freely available math font setup for Century Schoolbook 
AFAIK. I think there's a commercial one. What's your budget?
