In case anybody wondered: the new version of Tesseract in Ghostscript 10.05.0 calls the filesystem C++ library. macOS only supports filesystem from macOS 10.15 Catalina forward.

Thus, for Intel Macs, in order to compile Ghostscript for macOS 10.14 Mojave, the tesseract device had to be disabled.

ARM Macs only run macOS 11 Big Sur and above, so the issue doesn't present itself for them.
