Of course it does write over gs in /usr/local/bin. I would think that reinstalling your old Ghostscript would fix this problem if you want to use the brew version. This is certainly what regular Mac users do; if they run into a problem with a recent Ghostscript, they just install the previous version over the top of the new one without removing anything first.
