Just for the brainstorming: another solution would be to have an option
in a luatex binary wrapper like

(dvi)lua(la)tex --luajittex myfile.tex

But I don't think just replacing luatex binary by luajittex is a good
solution, for now users who type (dvi)lua(la)tex should get the luatex
binary, an action should be performed to get the luajittex one...
