Fwiw, I'm using the same mirror (ctex.org) and never experienced any problem
with symlinks.

Maybe more relevant than your OS is the filesystem of the partition where the
files are placed. I see the location is under /media, maybe you're using a
removable medium such as a USB stick, which are usually formatted in fat32,
which would explain the problems with symlinks.
