[tex-hyphen] hyphenation for languages in LaTeX and ConTeXt

Dear list,

in order to use the document language in LaTeX and ConTeXt
pandoc-generated documents (https://github.com/jgm/pandoc/issues/1614
and partly https://github.com/jgm/pandoc/issues/1667), a list that
contains how LaTeX and ConTeXt invokes languages is required.

[Sorry for the worst compossition of my previous sentence. I’m afraid
that right now is the best I write.]

Which has the most complete hyphenation support for LaTeX: babel or
polyglossia? Does the documentation contain a complete list of supported
languages?

Where could I find a complete list of languages supported by ConTeXt?
