Thanks a lot for pointing it out.

I took a look at unicode-letters, and the entry for guilements was not
present there.

(And what about LuaTeX then?)

On maybe any chance to fix this in LaTeX (based on the ability of
engine to recognise UTF-8?)

PS: Dimitrios, guilemets might be removed from the patterns if this is
fixed. Here is a derived version of patterns that will be used in TeX
Live in XeTeX:
      http://www.tug.org/svn/texhyphen/trunk/hyph-utf8/tex/generic/hyph-utf8/patterns/
so you may check if they are/will be OK
