Thanks indeed for your detailed explanation.  About accented vocals, in other
plain TeX documents of mine I've already fixed the proper catcodes so I think I
can work it out for bookmarks.  But for mathematics formulas, even adopting
that pdf unicode doc encoding of what you kindly attached the manual pages,
maybe the problem is that bookmarks are automatically generated from reading
the .toc file, where math formulas are written in TeX language as part of the
table of contents of the document.  But I'll be reading more carefully your
explanation and those manual pages that you courtesly posted.

Now though...  I still need help from Eplain and its people for another
problem...  ;-)
