Ok, I guess I was leaving out pst-math. For completeness here's what I had in 
my preamble:
\usepackage{pstricks-add}
\usepackage{pst-plot}
\usepackage{pst-node}
\usepackage{pst-3d}
\usepackage{pst-math}

\usepackage{graphicx}
\usepackage{psfrag}

If it still doesn't know about GAUSS you could try it the way Arnaud did.
