I think it would be reasonable to try and extend PSTricks with these
connections, if it would persuade all these potential UML users to use
TeX...

not that I have heard of. i guess it needs a while LaTeX package to do
UML. fun project.

generalizing a way of adding new connectors would be, i think, be a
moderately serious undertaking. dont forget that the things are
defined in PostScript header files.
incidentally, you might instead considering writing a Metapost library
to draw UML diagrams...
