More differences:
- different sets of builtin fonts
- a technical aspect: pdftex can only make use of ExtendFont / SlantFont
  for "downloaded" fonts
- different font support: pdftex supports postscript type1 and truetype
whereas dvips does not support truetype but postscript type1 and type3

teTeX / TeX Live 8 have a much improved updmap utility which generates
map files for several applications from a common configuration. This
tool does its best about the different characteristics of the supported
applications.
