[pdftex] How to change Producer value?

This means MikTeX distributes a changed pdfTeX, which I won't
support.

It's a MikTeX issue. Normal pdfTeX doesn't do that.

The official pdfTeX will produce a pdf with two entries of the
/Producer key. One with your value, and one with pdfTeX-1.10a .
