[pdftex] How to change Producer value?

This means MikTeX distributes a changed pdfTeX. Where can I get
the source code for that?

It is a MikTeX issue. Normal pdfTeX doesn't do that.

Your pdf should have two entries with the /Producer key. One with
your value, and one with pdfTeX-1.10a .
