There's mention of this in the pdftex manual---however, it's bogged down
by the TeX 256 character font limit.

QuickDraw/GX fonts worked in TeX/GX, but nothing else has worked towards
this AFAIK. I've posted a couple of times suggesting a TeX/GX-like
strategy for doing this, but this has evoked little interest. Hoefler
Text is problematical though 'cause the Mac license for it is rather
restrictive. I use Hoefler Text, Apple Chancery, Skia and Zapfino
therein---mostly just testing, haven't registered the shareware yet.
It's kind of awkward though 'cause it only runs in Mac OS 7.5 -- 7.6.1
(tip: use Basilisk if you've the license for a Mac ROM)
You can however purchase an Adobe Type 1 version of the eponymous
Hoefler Text from the designer, Jonathan Hoefler, www.typography.com and
install that using FontInst (assuming its one of the fonts which he's
released without a copy protection scheme), modulo the above-mentioned
character limit.
