pdftex can comfortably make files with chinese fonts since they are just
fonts, you can even use those huge truetypo fonts; it's mostly a matter of
generating the right enc files [for which there are tools].

just point to the ttf file, like:

gbsong81 <gbk-81.enc <htsong.ttf
gbsong82 <gbk-82.enc <htsong.ttf
gbsong83 <gbk-83.enc <htsong.ttf
gbsong84 <gbk-84.enc <htsong.ttf
gbsong85 <gbk-85.enc <htsong.ttf
gbsong86 <gbk-86.enc <htsong.ttf
gbsong87 <gbk-87.enc <htsong.ttf
gbsong88 <gbk-88.enc <htsong.ttf
gbsong89 <gbk-89.enc <htsong.ttf
gbsong8a <gbk-8a.enc <htsong.ttf
gbsong8b <gbk-8b.enc <htsong.ttf
gbsong8c <gbk-8c.enc <htsong.ttf
gbsong8d <gbk-8d.enc <htsong.ttf
gbsong8e <gbk-8e.enc <htsong.ttf
