[OS X TeX] Typesetting Proceedings of Seminar

Hi,

With the help of a colleague, I am editing the proceedings of our undergraduate mathematics seminar here at Stockton University. 
As the basis for each article, we have chosen
\documentclass{amsart}
This allows us to use things like
\title{…}
\author{…}
\address{…}

and so on. 

We have already produced the first volume, and are working and volume two.

The problem is, in order to get each paper to “look right,” that is,
start with the Stockton logo, paper title, author(s), and end with references followed by authors’ addresses, the only thing that worked for me was to typesett each article separately, and then 
“paste” together the pdf versions of the front cover, credits, table of contents, and all the articles, using Adobe Acrobat. 
This is pretty annoying, since I have to set “by hand” the page number of the first page, and even occasionally add a blank page, in order to get all articles to start at an odd numbered page.And if one article needs revision, this may lead to changes in all starting page numbers, etc.

This is all very primitive (and indicative of my low level of TeX sophistication). Can you recommend a better typesetting environment, which would allow me to typeset the entire volume in one go?
