[OS X TeX] Advice requested, please...

There is a project/package, Gnu-apl, which is developed using the classical terminal approach: checkout from the svn repo; ./configure; make; make install; etc etc.
The documentation uses the Gnu texinfo mechanism for most of it and also some READMEs of plain text.
Having used TeXShop and LaTeX to produce a macOS specific Installation Guide, now I am contemplating making a reference manual(s).
Rather than having to re-type the texinfo data all over again is there a tool to extract the text only?
Meanwhile I going to read up on making indexes (indices?) in LaTeX.
Or some other advice you can offer me?
