CC 2017 here works fine on Sierra.
I tried to hold on to CS for as long as I could, as I don't like software by subscription, but eventually gave up a year or so ago. I don't remember the specifics, but I think it had to see with Java, that CS requires but Sierra (and maybe El Capitan, and also Mavericks) doesn't allow.
Another unpleasantness of CC: it logs on to Adobe at startup (the Mac's startup, not Illustrator's startup), and refuses to run otherwise. I never tried to run it offline, but I imagine it wouldn't.
Other than that, the interface is nicer than CS (this is especially true of Acrobat, much nicer in DC version than X or XI, for example to compare PFDs, or add OCR, or extract pages), and overall the software feels more stable.
