[OS X TeX] TOC and header

The "memoir" document class does exactly this. Each \chapter, \section etc. command has two optional arguments, one for the table of contents and another for the running head.

Most probably there is some independent package that does this alone.

Alternatively, you can issue \markboth or \markright commands after each \chapter, to choose the running head you like.

The "memoir" document class is an incredibly powerful replacement for the "book" class, and incorporates lots of bells and whistles to produce professionally looking books, and to solve many formatting issues. If your material does not incorporate significant formatting tricks, I would bet that it would be relatively easy to make the transition. I did so for a book of mine and it worked like a charm.
