[OS X TeX] weird behavior

If that's TeXShop double clicking the file should open it in TeXShop. Another thing that might be helpful would be to run `mdls` on that file in Terminal; in Terminal type `mdls ` (notice the space) and then drag and drop the problematic file onto the Terminal window and hit Return. Let us know what it returns.

Howdy,
Sigh... unless you really have all those older versions of TeXShop it sounds like your LaunchServices database is corrupt. What version of OS X are you using? (I may have said this before.)
One thing you might try is select one of your .tex file and again do a Get Info…. Select the version of TeXShop in the list that you think is correct and select it for that file. The grayed out Change All… button will become active and can click it. You'll be asked if you want all .tex files to open with this application and agree to that. Then all .tex files will open with that application.
