The usual go-to source for OpenGL programming is the (red book) OpenGL Programming Guide by the OpenGL Architecture Review Board and published by Addison Wesley. I have the (very outdated) version 1.2 when I did 3D openGL programming in Cocoa during the PPC days. It is like the TeXbook by Knuth - everything is there but it is not as comprehensible as one would like in many cases.
