Another thing to consider---if you use [la]tex+dvips+distiller as your Engine choice, with the default simpdftex script, that script determines the path to (the parent of) gs, being by default

distillerpath="/usr/local/bin"

so it will not use the version in /opt/local/bin unless you modify the script, no matter how you set TeXShop's TeXShop->Preferences->Engine->Path settings.
