This discussion made me curious, so I executed mdls on a .tex file. Here is what I get:

loon:~  $ mdls /Users/gray/Documents/Book\ Project/Manuscripts/Dynamics/Chapter-8/Section-8.1/ProblemFigs/C8S1Prob-Spool-1/Labels.tex
kMDItemContentCreationDate     = 2010-11-29 00:20:47 +0000
kMDItemContentModificationDate = 2010-11-29 00:20:47 +0000
kMDItemContentType             = "org.tug.tex"
kMDItemContentTypeTree         = (
    "org.tug.tex",
    "public.text",
    "public.data",
    "public.item",
    "public.content"
)
kMDItemDateAdded               = 2012-07-23 16:56:30 +0000
kMDItemDisplayName             = "Labels.tex"
kMDItemFSContentChangeDate     = 2010-11-29 00:20:47 +0000
kMDItemFSCreationDate          = 2010-11-29 00:20:47 +0000
kMDItemFSCreatorCode           = ""
kMDItemFSFinderFlags           = 0
kMDItemFSHasCustomIcon         = 0
kMDItemFSInvisible             = 0
kMDItemFSIsExtensionHidden     = 0
kMDItemFSIsStationery          = 0
kMDItemFSLabel                 = 0
kMDItemFSName                  = "Labels.tex"
kMDItemFSNodeCount             = 274
kMDItemFSOwnerGroupID          = 501
kMDItemFSOwnerUserID           = 501
kMDItemFSSize                  = 274
kMDItemFSTypeCode              = ""
kMDItemKind                    = "TeX Document"
kMDItemLogicalSize             = 274
kMDItemPhysicalSize            = 4096

By the way, after updating to 10.8.4, rebuilding the launch services database, and restarting, my icons did reappear and continue to display correctly.
