[OS X TeX] Wish for TeXShop Windows menu

This doesn't answer you question but I think it is *very* dangerous to work simultaneously with multiple versions of the same file. Every time I did that, even though I felt absolutely sure I knew what I was doing,  I invariably ended up mixing up the versions and had to start from a backup again.
