Did you really install MacTeX? The personal texmf tree set up with MacTeX has its root at ~/Library/texmf not ~/texmf.
It's definitely because you used \pdfmapfile which probably means that Stempel Garamound is probably a ttf font. Pdf(la)tex understands ttf fonts but dvips doesn't so you usually use a package that is only for pdf(la)tex that loads the map file separately rather than loading the map file for all drivers.
