But the other is a bit more annoying: when I want to open a file from within TeXShop, the "favorites" panel on my new iMac does not include dropbox, where much of my source code resides. I have looked at various preferences, but can't see how to include it. There is a workaround: Applications->Dropbox->file, but it would be nicer to be able to call up Dropbox directly from the panel. Any suggestions?

Howdy,
If you are talking about buttons on the source or preview window's toolbar you can customize those to be the way you wish. Right/Control Click in an empty space on the toolbar of your choice and choose Customize Tool Bar… from the Contextual Menu. The re-order andd add/remove items so it is arranged as you please.
You've already received the answer about placing the Dropbox folder in the side bar of the Open (and Save for a new document) sheet. Glad Chris Goedde understood what you were talking about.
Good Luck,
