There are a lot of options, see the doc file Ps2pdf.htm inside the Ghostscript installation – wherever Mac TeX puts it. I made a few tests with blueish EPS files from the TeX Live 2011 distribution, using the gs invocation I mentioned previously. I also changed the colour models. I never could gain the impression that blue had turned to purple.

Some LCD screens can perform "colour transformations" when looking from the edge, in a flat angle. (And I have no idea what glossy LCDs can perform else! Always tried to keep a large distance to them.)
