But the characters < and > are most commonly used in mathematics as binary operators, not as delimiters. To use them any other way requires extra markup, or use within special environments, which are themselves delimited.

It seems to me that what you are asking for is not necessarily something simple, but may require some specialized analysis of the source content.
Either that, or you want to be able to specify regions of your document source, within which the extra highlighting should be used, but outside of which it should not.
