(He would like to learn LaTeX but is too overworked, now, to do it.) Does anyone know of an Apple application that will do this for him? Then again, he might have access to a Windows machine to do the conversion, and then transfer the resultant .doc to his Mac.

Pandoc

http://johnmacfarlane.net/pandoc/

is able to convert some LaTeX into ODF.
An installer for MacOS (Intel) and Windows is available.
No TeX installation is required.

The magic incantation is

pandoc -f latex -t odt -s -o <name>.odt <name>.tex

Depending on the complexity of the original document,
most of the structure will be preserved/lost.

ODT to doc should be a simple step after that.
